Mezcal the original agave spirit from Mexico, has a 400 year old tradition. Our 7 to 10 year old agave plants are harvested, and their hearts are steam-cooked to convert the starches to sweet sugars. The agave is then mashed to extract the sweet juice for fermenting. Once fermented, the juice is double distilled into the wonderful, fiery smooth tasty spirit called Mezcal.
