Method

Fiano (fi-ah-no) is a Southern Italian varietal that thrives in Northern Heathcote’s warm Continental Climate. This single-vineyard fruit was handpicked and gently pressed before fermentation at low temperature in stainless steel using selected yeast chosen to enhance varietal characteristics with a focus on fruit phenolics. The use of these methods was employed to retain youth, freshness vibrancy in the wine. Fiano retains fantastic acidity even in warmer climates and this wine has great freshness and zing. The wine was kept on lees for 4 1/2 months to increase texture and pallet weight. After cold settling and racking off gross lees the wine was filtered before bottling.

Results

A dry, fruity, medium-bodied & aromatic white. The palate incorporates Nashi Pear, Honeydew melon and Lemon, finishing with mouth-watering acidity and light grip.

Conclusion

A refreshing, easy-drinking and extremely versatile wine. Fiano is a super friendly food wine, its fresh acidity pairs exceptionally well with spicy Asian dishes or greasier meat & cream-based dishes.

Winery notes Gentle press, slow ferment using selected yeast at 15˚C over 3 weeks. Cold settled and racked off gross lees. Maturation on light lees in stainless steel. Filtered prior to bottling.
